Apple Wonton Bundles

5 medium apples, peeled and diced 
1 tsp. of cinnamon
1 tsp. Chinese five spice powder
1/2 cup of sugar
64 wonton wrappers
Vegetable oil, to Fry (about 4 cups)
1 jar caramel ice cream topping, warmed


PREPARATION:

• Cut each apple into four wedges; cut wedges into four pieces.

• Toss into a bowl with cinnamon, five spice powder and sugar.

• Place a piece or two pieces of apple in the center of each wonton wrapper, depending on how big the piece is.

• Brush edges of wrapper with water and bring up around apple, make sure the apple piece doesn’t break through the wonton wrappers; pinch to seal.

• Heat oil in pot to 370-375°

• Fry bundles until golden brown (it only takes about 1 minute).  

Cool slightly. Serve with a bowl caramel topping or ice cream.  

Banana Muffins with Crumb Topping

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas ripe and mashed
3/4 cup white sugar
1 egg, lightly beaten
1/3 cup butter, melted
1/3 cup packed brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter

PREPARATION:

1. Preheat oven to 375 degrees F, Lightly grease 10 muffin cups, or line with muffin papers.

2. In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.

3. In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1-tablespoon butter until mixture is course. Sprinkle topping over muffins.

4. Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean .Enjoy!

NACHOS

1 lb. lean ground beef (turkey or chicken ground is optional)
1 package taco seasoning
1 medium can refried beans
1 package pre-shredded Mexican blend cheese
1 bag corn chips(restaurant style works best)
1 medium tomato diced
1 small onion chopped
1 can black olives, pitted and sliced(optional)
shredded lettuce

PREPARATION:

1. Preheat oven to 350 degrees.

2. Brown and season ground beef in a large skillet.

3. In a 13-by 9- by 2-inch pan spoon beans in a strip along one edge of the pan. Next to that strip, arrange a strip of ground beef. Continue to alternate between beans and meat until you have filled the pan.

4. Top with cheese. Bake at 350 degrees for 20 to 30 minutes or until cheese is melted

5. Serve with lettuce, tomato, onion, guacamole and olives on the side. Serves 8-10

Pineapple/ Bananaberry Smoothies

2 Ripe Bananas
1/2 cup of frozen pineapple chunks
1 cup whole frozen or fresh strawberries
1/2 cup frozen or fresh blueberries
8 oz vanilla low-fat yogurt
1 cup milk
2 tablespoons of honey

PREPARATION

1. Cut bananas into chunks.

2. In a blender container combine bananas, pineapple, strawberries, blueberries, honey, yogurt & milk.

3. Cover & blend until smooth.

4. Pour into small pitcher or glasses.

5. Garnish with whole strawberries.
